Jeera-n-Mint Roasted Potatoes

Roasted potatoes are a go-to favorite with just about any meal, and that gives me a good reason to amp up the flavors and add a slight Indian touch to them.

Use this recipe as a side to daal-n-kebab or curry-n-rice. Cut the potatoes in your desired shape and format to suit the occasion - diced cubes pair well with curry and daal, while home-style fries work nicely with kebabs and grilled meat.

We will use a mix of whole and ground spices, along with fresh herbs to create a flavored oil to coat the potatoes, which can be oven-roasted or air-fried to golden perfection. While the potatoes can be marinated in advance, it’s best to cook them right before serving as a side with favorites like the classic chicken tikka shown below.
