Savory Poha - Flattened Rice
I like to think of Indian Savory Poha as the ideal picnic food. Its bright yellow color and ability to be served at room temperature make it a beautiful, spiced salad that’s easy to carry.
Of course, it doesn’t matter whether you enjoy it as a brunch dish, a snack, or a high tea treat. As always, the spice level is entirely up to you.
Flattened or pressed rice, known as Poha in India, is commonly used in various regional cuisines. While this recipe is savory, I also have fond childhood memories of a special sweet Parsi version made with milk, rose syrup, and Poha. This ingredient might not be readily available at regular Western supermarkets, but you’ll usually find it at most South Asian specialty stores, and often in generous quantities at a great price.

Feel free to switch things up with mini potatoes, sautéed greens, or any other vegetables you like.
Another exciting touch is the addition of peanuts (or any nuts of your choice) for crunch and flavor.
Lemon juice is an essential element of many Indian snacks. It adds the tang that balances the spices—just a dash at the end, right before serving, does the trick.
