Lemon Mint Spicy Quinoa Salad

This simple quinoa side salad with zest and zing is my welcome to warming temperatures and the possibility of longer days with more sunlight. But for me, this recipe stands the test of all seasons, and you will find it worthy of your holiday celebration, as much as for your summer outdoor parties.

Hearty quinoa is cooked in a lemony spiced cooking liquid, hence infusing the whole grain with whole spices like cloves and black peppercorns, to extract maximum flavor.

With the refreshing punch of fresh lemon juice, mint, and parsley; the quinoa gets a spice kick from jalapeño pepper, and the added crunch of pecans, although feel free to use any nuts of your choice.
