Tomato Mint Basmati Rice
When I need a quick meal or something to feed a larger crowd, this Tomato Rice recipe is one of my absolute go-to’s. It’s simple, flavorful, and can easily be elevated with a few additions—sometimes, I toss in chicken tikka (another simple dish) to make it heartier for the meat lovers in the group.
The beauty of this dish is its versatility. With tomatoes being a year-round produce item in India, it’s common to find a variety of recipes featuring regional versions of tomato rice. Fortunately, fresh and canned tomato options are just as abundantly available here in the West.
For this recipe, I’ve used touches from the cuisines of the south and west of India, to create a simple time-tested recipe for a gluten-free and vegan option that can be used for all reasons and occasions.
Fragrant Basmati rice is cooked in puréed tomatoes and the flavors are delicately balanced with chopped garlic, a mix of whole spices, mint, and cilantro. The result: aromatic and moist tomato rice with the taste of fresh mint which will fill your senses with mouthwatering joy. Tomato Mint Basmati Rice served freshly made can be a wholesome entree or a versatile side to your grilled meat or fish.
