Masala Tilapia with Fresh Tomato Relish

This tilapia recipe was inspired by a family vacation to the Hawaiian island of Maui, filled with nature’s bounty. On my return home, I felt a desire to replicate fresh island fish flavors, but with an Indian spice blend, and a fresh tomato relish.

I’ve lightly spiced and sautéed tilapia fish (feel free to use any white flesh fish of your choice) in a few spices. The fish topping, however, is the ‘pièce de résistance’ of this preparation. An olive oil tempering of fresh garlic and green chilies, with a touch of spice, is added to fresh diced tomatoes, herbs, and lemon juice. The result is a topping, that creates mouthwatering bites of refreshing island flavors, over light flaky fish, best served freshly made.

Recipes like this one are great year-round. But I’m always looking for simple ideas like this one, during spring and summer, when all one feels like eating, is quick-cooking meals with fresh ingredients. Serve spiced fish topped with fresh tomato relish as a weekday meal or for weekend entertaining.
