Parsi Lagan nu Achar (Wedding Chutney)

Most Parsi weddings and celebrations include Lagan nu Achar, a delicious wedding chutney, as part of the feast. It is made with carrots and dried fruits and is often paired with crisps as a starter, though I like to think it is more to keep diners distracted while the caterers bring out the rest of the courses!

While dishes like Dhansak and Parsi Curry, both of which we offer as single-use meal products, are household staples, Lagan nu Achar is rarely made at home, even by Parsis themselves. The traditional version served at weddings can be tricky to replicate and usually contains a large amount of sugar, as is common with many commercial chutneys.

For this recipe, I have created a much simpler version inspired by its authentic sweet-and-spicy taste. It is perfect as a relish-style chutney with Indian food and equally amazing on burgers, sandwiches, and wraps. Hope you enjoy it!
