Black Pepper Chicken
One of the simplest ways to begin exploring spices is with black pepper. It’s typically added along with salt to create a basic seasoning blend that enhances the flavor of meats, vegetables, eggs, fish, really anything you want to bring to life with spice!
This recipe for Black Pepper Chicken truly highlights the depth of flavor this versatile spice brings to the table. It’s also a dish where our Garam Masala blend shines in the spotlight. One of the key ingredients in garam masala is black pepper, along with cardamom and cinnamon. In this recipe, I’ve used garam masala during the marination process, but in my own kitchen, I often sprinkle a little at the very end, as well, along with the finishing spices.
You’ll notice a departure from traditional Indian curries here. That’s intentional. Black Pepper Chicken uses a drier format than the typical curry, and the preparation’s true essence comes through at two key moments: first, when you temper spices and curry leaves in oil before adding the chicken. And again at the end, with a final burst of freshly ground (preferably) spices to complete the flavor profile.
