The Parsi Poro (Omelette)
As you’ve probably read in our blog posts, the Parsi love for eggs transcends what’s considered normal! In Parsi cuisine, eggs can elevate a wide variety of dishes — whether it’s adding a sunny-side-up egg or well-beaten frothy eggs to vegetable and meat preparations.
This concept is called "per eedu", which loosely translates to “eggs over (something).” In addition to this concept of per eedu, there are many exciting and well-accepted Parsi egg dishes in India, one of which is highlighted in today’s recipe.
Parsi Poro Omelette
The Parsi Poro is a spicy omelette (or omelet) that’s perfect for a weekday meal or a relaxed weekend brunch.
One of the coolest ways to serve the Poro is as a mini slider sandwich, commonly referred to among us Parsis as "Poro Pav". Put a picnic and a Parsi in the same place, and you’re almost guaranteed to find Poro Pav on the menu!
Cooking this omelette can sometimes be tricky, so let each side cook well before flipping. Another great way to cook it efficiently is to cover your pan with a lid — this helps it cook evenly and keeps the omelette moist. Growing up, our kitchen would often come alive on weekend mornings with the sound and smell of my dad making omelettes in large batches. Paired with bakery-fresh crusty bread on the side, it was one of my favorite ways to wake up — simple and comforting.
