Spicy Egg Salad Sandwiches

Anyone here remembers the handy flappy toastie maker? For those unfamiliar with it, a toastie-maker is the forerunner to all sandwich and panini-making implements. It is a simple mechanical clamp-based kitchen tool, which makes delicious sandwiches right on the stovetop.

Spicy Egg Salad

For me, one of the best parts of these egg salad sandwiches is the lack of mayonnaise in the egg salad. The mustard-flavored, grated eggs work amazingly well along with crunchy, finely chopped red onions, and a kick from the fresh chili pepper, resulting in a melt-in-your-mouth creamy salad.

I've given this simple egg salad some personal favorite touches, with a dash of hot sauce and the optional added crunch of diced bell peppers for texture and color. The outcome is a versatile sandwich, perfect for brunch, lunch, high tea, or light dinner.

My favorite pairing with the egg sandwich is oven-roasted Jeera-n-Mint Fries, and for a heavier side, take a look at the Lemony Spicy Quinoa. For chai-tea gatherings and brunches, I prefer to cut them into smaller tea-sandwich triangles to suit the meal.
